🌿 This recipe allows for two methods—using pre-cooked polenta or making polenta from scratch—giving versatility and rich flavor with fresh rosemary and parmesan.

Ingredients

1 package pre-cooked polenta approx. 500g / 17.5oz

2 tbsp olive oil

1 sprig fresh rosemary finely chopped

1 tsp black pepper

Pinch of salt if needed

1 cup quick-cook polenta 190g

3 + 1/3 cups chicken stock 800ml

4 tbsp butter 60g

½ cup freshly grated parmesan cheese 30g

2 sprigs fresh rosemary finely chopped

2 tsp black pepper

½ tsp sea salt flakes or kosher salt

Pinch of extra pepper

1 tbsp olive oil for baking

Instructions

1-Method 1: Using Pre-Cooked Polenta
1. Preheat oven to 430°F (220°C).
2. Remove polenta from packaging; pat dry if excess moisture is present.
3. Cut polenta into evenly sized fries.
4. In a large bowl, mix olive oil, rosemary, and black pepper.
5. Add polenta fries to the bowl and toss to coat evenly.
6. Arrange fries in a single layer on a baking sheet.
7. Bake for 30-40 minutes, or until golden brown and crispy.

2-Method 2: Making Polenta from Scratch
1. Bring chicken stock to a boil in a medium pot.
2. Reduce heat to a simmer. Slowly whisk in the polenta until fully incorporated.
3. Stir in butter, parmesan cheese, chopped rosemary, 2 tsp black pepper, and sea salt flakes. Cook, stirring, for 2-3 minutes until butter melts and mixture thickens.
4. Pour cooked polenta into a lined baking dish and spread evenly.
5. Allow to cool completely, then cover with plastic wrap and chill in the refrigerator for at least 1-2 hours (or overnight) until firmly set.
6. Preheat oven to 430°F (220°C).
7. Once set, cut the chilled polenta into fries.
8. Brush fries lightly with olive oil.
9. Place fries on a baking sheet and bake for 30 minutes, or until golden brown and crispy.
