Ingredients
– 2 flour tortillas
– 1 teaspoon butter
– 2/3 cup shredded mozzarella cheese, divided
– 2 tablespoons pizza sauce
– 6 slices pepperoni, sliced in half
– 2 fresh basil leaves, sliced thin (optional)
Instructions
1-Preheat a large non-stick skillet to medium-high heat and lightly butter one side of each flour tortilla.
2-Place one tortilla, butter side down, in the pan and top with half the shredded mozzarella cheese, pizza sauce, pepperoni, and basil leaves if using.
3-Add the remaining cheese and cover with the second tortilla, butter side up.
4-Cook for 2-3 minutes until the cheese melts and the bottom is golden, then flip and cook until crisp.
5-Transfer to a cutting board, slice into wedges, and serve warm.
