For the glaze:
1 to 1 1/2 cups powdered sugar
2–3 tablespoons reserved pineapple juice
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a separate bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
4. Stir in the sour cream, then gradually fold in the dry ingredients until just combined.
5. Gently fold the crushed pineapple into the batter.
6. Pour the batter into the prepared pan, smoothing the top.
7. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool the bread in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
9. To prepare the glaze, mix the powdered sugar with the reserved pineapple juice until smooth, then drizzle over the cooled bread. Let the glaze set before slicing and serving.
