For the glaze:
1 to 1 1/2 cups powdered sugar
2–3 tablespoons reserved pineapple juice
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a separate bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth.
4. Stir in sour cream, then gradually blend in dry ingredients until just combined.
5. Gently fold in crushed pineapple.
6. Pour batter into the prepared pan, leveling the top.
7. Bake for 55-60 minutes, or until a toothpick in the center comes out clean.
8. Cool bread in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
9. Prepare glaze by mixing powdered sugar with reserved pineapple juice until smooth, drizzle over cooled bread. Let glaze set before serving.
