Instructions
1-In the bowl of a hand mixer or stand mixer fitted with a paddle attachment, add softened butter and powdered sugar.
2-Mix on low to medium speed for 1 to 2 minutes, starting slow to avoid sugar dust. Scrape down the sides of the bowl.
3-On low speed, add pineapple extract, pineapple juice or cream, and kosher salt.
4-Mix on medium-high speed for 1 to 2 minutes until the frosting is light, creamy, and fluffy with stiff peaks.
5-Use to frost pineapple cupcakes or pineapple cake as desired.
