Ingredients
2 tablespoons vegetable oil, divided
2/3 pound chuck roast, cut into cubes
Kosher salt, to taste
Freshly ground black pepper, to taste
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
3 cups low-sodium beef broth
2 tablespoons heavy cream
1 1/2 cups shredded provolone cheese, divided
Optional: mushrooms (white button or cremini), tomato paste, paprika, Worcestershire sauce, beef consomme paste, sourdough boules, fresh parsley for garnish
Instructions
1. Heat 1 tablespoon of vegetable oil in a large pot over medium heat. Season beef cubes with salt and pepper, then sear in the pot until deeply browned and cooked through, about 8-10 minutes. Remove and set aside.
2. In the same pot, add the remaining oil and sauté the chopped onions and bell peppers until softened, about 3-4 minutes. Add minced garlic and cook until fragrant.
3. Sprinkle the flour over the vegetables, stirring well, and cook for 2 minutes to develop a slight golden color.
4. Gradually pour in the beef broth, stirring continuously, then add the heavy cream and half of the provolone cheese. Bring to a simmer and let it cook for 10 minutes to thicken.
5. Stir the cooked beef back into the soup. Adjust seasoning with additional salt and pepper if desired.
6. Meanwhile, prepare sourdough boules by cutting the tops off and scooping out the interior to form bread bowls. Cube the removed bread and toast on a baking sheet.
7. Ladle the thickened soup into the bread bowls, top with cubed bread and remaining provolone cheese.
8. Preheat the broiler and broil until the cheese is melted and golden brown. Garnish with chopped parsley before serving.
