Ingredients

– 1 cup (226g) unsalted butter

– 1/2 cup (100g) packed light or dark brown sugar

– 1/4 cup (50g) granulated sugar

– 1 and 1/2 teaspoons pure vanilla extract

– 2 and 1/4 cups (281g) all-purpose flour

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon salt

– 3/4 cup (100g) finely chopped pecans

– 1/4 cup (50g) coarse sugar for rolling

– 1/4 cup (32g) finely chopped pecans for rolling

Instructions

1-Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.

2-In a large bowl, cream 1 cup (226g) unsalted butter with 1/2 cup (100g) brown sugar and 1/4 cup (50g) granulated sugar until smooth.

3-Beat in 1 and 1/2 teaspoons pure vanilla extract.

4-Add 2 and 1/4 cups (281g) all-purpose flour, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt; mix on low until combined.

5-Fold in 3/4 cup (100g) finely chopped pecans.

6-Shape into two logs, wrap in plastic, and chill for 4 hours or overnight.

7-Roll the chilled logs in a mixture of 1/4 cup (50g) coarse sugar and 1/4 cup (32g) finely chopped pecans, pressing gently.

8-Slice each log into 12 equal cookies and place them 2 inches apart on the prepared sheets.

9-Bake for 12-14 minutes until edges brown, then cool on the sheet for 5 minutes before moving to racks.
