⅓ cup (75 g) unflavored vegetable oil

½ cup (100 g) white granulated sugar

¾ cup (150 g) soft brown sugar

⅔ cup (150 g) smooth unsweetened creamy peanut butter (reduce brown sugar by 2 tbsp if using sweetened peanut butter)

3 large eggs, room temperature

1½ tsp vanilla extract or essence

1 cup (225 g) buttermilk, room temperature

1½ cups (340 g) unsalted butter, room temperature

3 cups (375 g) powdered sugar

2 tsp vanilla extract or essence

½ cup (120 g) whipping or heavy cream, room temperature

½ tsp salt

1 cup (250 g) smooth unsweetened creamy peanut butter

Instructions

1-First, preheat the oven: to 180°C (350°F), or reduce to 160°C (320°F) if using convection, and grease or line two 8-inch cake pans. This helps your cake release easily and bake uniformly.

2-Sift together the flour, cornstarch, baking soda, baking powder, and salt: mix well and set aside to ensure everything blends smoothly.

3-In a large bowl, cream the butter, oil, white sugar, brown sugar, and peanut butter: on medium speed for 3 minutes until light and creamy.

4>Add the eggs one at a time on low speed: mixing well after each addition to incorporate air and keep the batter fluffy.

5-Mix in the vanilla and buttermilk: on medium speed until smooth, then gently fold in the dry ingredients with a spatula until just combined.

6-Divide the batter evenly between the prepared cake pans and tap to remove air bubbles for an even rise.

7-Bake: for 30-35 minutes or until a toothpick inserted comes out clean or with moist crumbs, checking around 30 minutes to avoid overbaking.

8-Cool the cakes: in the pans for 15-20 minutes, then transfer to wire racks to cool completely before frosting.
