🫐 This galette offers a fresh, simple way to celebrate seasonal fruits with a rustic, elegant flair that’s perfect for any occasion.

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

1 and 1/2 cups all-purpose flour

2 tablespoons granulated sugar

1/4 teaspoon salt

1/2 cup cold unsalted butter (cubed)

1/4 cup ice cold water

1 large egg (beaten with 1 tablespoon milk for egg wash)

Optional sliced almonds and coarse sugar for topping

2 tablespoons unsalted butter

1 large egg at room temperature

1/2 cup almond flour or almond meal

1/4 cup granulated sugar

1/2 teaspoon almond extract

1/2 teaspoon pure vanilla extract

3 heaping cups peach slices (about 2 3 medium peaches)

1 cup blueberries

1 tablespoon granulated sugar

1 tablespoon almond flour or all-purpose flour

Instructions

1-In a mixing bowl, combine the flour, sugar, salt, and cubed butter until the mixture looks like coarse crumbs.

2-Add the ice cold water gradually and mix until the dough forms a ball; this creates a flaky base for your galette.

3-Roll out the dough on a floured surface to about 1/4 inch thick, then transfer it to your prepared baking sheet.

4-Spread the frangipane over the dough, leaving a border, and arrange the peach slices and blueberries on top, sprinkling with sugar and flour.

5-Fold the edges over the filling to form the galette shape, brush with egg wash, and add optional toppings like almonds and coarse sugar.

6-Bake for 35-40 minutes until golden and bubbling; let it cool a bit before serving to enjoy the flavors at their best.
