Ingredients
1 pound (450 grams) boneless, skinless chicken breast
1 tablespoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper, to taste
1 tablespoon avocado oil or olive oil
1 tablespoon avocado oil

1/2 jumbo yellow onion, diced
4 to 6 large cloves garlic, minced
8 ounces (225 grams) dry penne pasta
2 cups (480 ml) chicken broth
1/2 cup (120 ml) heavy cream
1 cup (100 grams) finely grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and pepper, to taste
Optional additions: baby spinach, mushrooms, or sundried tomatoes
Instructions
1. Mix Italian seasoning, paprika, salt, and pepper, then rub on both sides of the chicken. Pat them dry for even seasoning.
2. Heat a large pan over medium heat with 1 tablespoon oil. Cook chicken 3-5 minutes per side until the internal temperature reaches 165°F (74°C), then remove and rest.
3. Lower heat to medium-low. Sauté onion in remaining oil and butter until translucent, then add garlic and cook for 1 minute.
4. Pour in chicken broth, scraping up browned bits. Bring to a boil.
5. Add pasta, submerge thoroughly. Simmer gently for about 10 minutes with the pan covered until pasta is al dente.
6. Turn off heat. Stir in Parmesan, cream, and parsley until cheese melts and sauce thickens. Fold in vegetables if using.
7. Slice chicken, return to pan, toss to combine. Adjust seasoning as needed.
