Instructions

1. Combine dry pancake ingredients in a large bowl: flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla until smooth, with some lumps remaining.
3. Stir wet ingredients into dry until just combined; avoid overmixing.
4. Heat a griddle or nonstick skillet over medium-high heat and lightly butter the surface.
5. Pour about 1/4 cup batter per pancake onto the griddle.
6. Cook until bubbles form on the surface (about 1 to 1½ minutes), then flip and cook for another 1 to 2 minutes until golden brown.
7. Keep pancakes warm on a baking sheet in an oven preheated to 175°F (80°C) while finishing the batch.
8. For bacon, preheat oven to 400°F (200°C), place bacon strips on a foil-lined sheet or wire rack, and bake 15-20 minutes until crispy. Drain on paper towels.
9. Prepare scrambled eggs by whisking eggs with milk or water, cooking them gently in butter over medium-low heat until just set but still moist.
