Ingredients
2 bone-in, skin-on chicken breasts (6 to 8 ounces each)
1 tablespoon olive oil or neutral oil
2 tablespoons butter
Salt
Freshly ground black pepper
2–3 garlic cloves
Fresh herbs like rosemary or thyme sprigs
Optional: Lemon slices or half a lemon for serving
Instructions
1. Preheat the oven to 400°F (204°C).
2. Pat the chicken dry and season generously with salt and pepper.
3. Heat oil in an oven-safe skillet over medium-high heat.
4. Place the chicken skin-side down in the skillet and cook without moving for 6 to 10 minutes until the skin is crispy and golden brown.
5. Flip the chicken, add butter, garlic, and herbs to the pan.
6. Continuously spoon melted butter over the chicken until it is well-coated.
7. Transfer the skillet to the oven and roast until the internal temperature of the chicken reaches 165°F (74°C), about 15-20 minutes for boneless pieces and 25-35 minutes for bone-in.
8. Let the chicken rest for 5 minutes before serving with optional lemon slices.
