Ingredients
2 cups thinly sliced onions
2 tablespoons butter
1 (15 ounce) can chicken broth
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 chicken bouillon cubes
1/4 cup processed cheese product diced
1 1/2 to 1 3/4 cups white sauce
Shredded cheddar cheese for garnish
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1 1/2 cups whole milk
Instructions
1-First, prepare your ingredients as outlined in the directions. In a 2-quart saucepan, melt 3 tablespoons butter. Add sliced onions and cook on low to medium heat, stirring frequently, until soft and clear but not brown.
2-Next, build the flavors. Add chicken broth, chicken bouillon cubes, 1/4 teaspoon salt, and 1/4 teaspoon ground pepper. Stir until heated through.
3-Keep going by adding the white sauce and processed cheese product. The white sauce should be thick when off the heat. Return to medium-low heat and simmer, stirring constantly, until cheese melts and ingredients blend.
4-Let it simmer more. Reduce heat to warm and cook for an additional 30 to 45 minutes.
5-Finish up and serve. Serve garnished with shredded cheddar cheese and warm dark bread slices.
6-To make the thick white sauce, follow these steps. Melt 3 tablespoons butter in a 1-quart saucepan. Add 3 tablespoons flour and cook on medium heat until the mixture thickens and pulls away from the sides. Gradually add 1 1/2 cups whole milk while stirring constantly. Add 1/4 teaspoon salt and continue stirring until the mixture thickens to a pudding-like consistency and is smooth. Remove from heat until ready to use.
7-Optional Slow-Cooker Tips: For hands-off preparation, after caramelizing the onions, transfer to a slow cooker with the broth and other ingredients. Cook on low for several hours to deepen the flavors, making it ideal for busy families.

π§
Use sweet mild onions (like 1015’s in season) for the best flavor.
π§ Add milk slowly to the white sauce and be patient to achieve the perfect pudding-like thickness.
βοΈ Monitor salt carefully as both broth and bouillon contribute to the saltiness.
