Ingredients
1 whole chicken (about 4 pounds / ~1.8 kg)
1/4 cup hoisin sauce (60 ml)
1/4 cup fresh orange juice (60 ml)
2 tablespoons soy sauce (30 ml), preferably low-sodium
2 tablespoons honey (42 g)
1 tablespoon rice vinegar (15 ml)
3 cloves garlic, minced
1 teaspoon grated fresh ginger
1 teaspoon orange zest
Salt and black pepper to taste
2 green onions, sliced for garnish
Sesame seeds for garnish (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a bowl, whisk together hoisin sauce, fresh orange juice, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and orange zest until well combined.
3. Season the whole chicken generously with salt and black pepper inside and out.
4. Place the chicken in a roasting pan and brush it generously with the prepared hoisin orange glaze, reserving some for basting during cooking.
5. Roast the chicken for approximately 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C). Baste every 20 minutes with the reserved glaze to keep the skin moist and flavorful.
6. For extra crispiness, broil the chicken for the last 3 to 5 minutes, watching carefully to avoid burning.
7. Let the chicken rest for about 10 minutes before carving to retain the juices.
8. Garnish with sliced green onions and optional sesame seeds. Serve with steamed vegetables or rice for a complete meal.
