Ingredients

– 25 chocolate sandwich cookies crushed into crumbs

– ¼ cup unsalted butter melted

– 24 ounces softened cream cheese

– ¾ cup granulated sugar

– 2 cups chocolate-hazelnut spread

– 1 tablespoon vanilla extract

– ½ teaspoon salt

– ¾ cup heavy cream at room temperature

– 4 large eggs lightly beaten at room temperature

– ½ cup heavy cream

– 1 cup chocolate-hazelnut spread

Instructions

1-First: preheat the oven to 350ºF and wrap a 9-inch springform pan with aluminum foil. Combine the cookie crumbs and melted butter, then press the mixture into the bottom and 2-inch sides of the pan.

2-Bake for 10 minutes and allow it to cool. Reduce the oven temperature to 300ºF to achieve that silky texture we love.

3-Beat the cream cheese and sugar until smooth, then add the chocolate-hazelnut spread, vanilla extract, and salt; mix on low speed until smooth. Slowly add the heavy cream and mix fully.

4-Gently fold in the eggs, then pour the batter over the crust. Place the pan in a roasting pan and fill the roasting pan halfway with hot water to create a water bath.

5-Bake for 1 hour, or until the edges are set and the center jiggles slightly. Turn off the oven and leave the cheesecake in the water bath for 1 hour.

6-Final Steps for Cooling and Glazing: Allow the cheesecake to cool to room temperature, then refrigerate it overnight for the best set. For the glaze, heat ½ cup heavy cream until simmering, remove from heat, and stir in 1 cup of chocolate-hazelnut spread until smooth.

7-Pour the glaze over the cheesecake and smooth it with a spatula to let it drip down the sides. Refrigerate for at least 1 hour before serving to firm it up.
