4 ounces dried mushrooms

5 cups hot water for soaking the dried mushrooms

1 large minced onion

1 pound minced fresh mushrooms reserving some for garnish

3 tablespoons unsalted butter

1/3 cup sherry or brandy

1 teaspoon dried thyme

Salt preferably smoked salt to taste

4 cups mushroom soaking water

1 additional tablespoon unsalted butter for sautéing reserved fresh mushrooms

2 to 4 tablespoons heavy cream

Plenty of black pepper to taste

Fresh herbs like chives or parsley for garnish

Instructions

1-First: soak 4 ounces of dried mushrooms in 5 cups of hot water for 45 minutes to an hour; strain and reserve the water for later.

2-In a pot, heat 3 tablespoons of unsalted butter over medium heat to brown 1 large minced onion and 1 pound of minced fresh mushrooms (save some for garnish) for about 10 minutes.

3-Building the Base: Add the reconstituted dried mushrooms and cook for 1 to 3 minutes. Stir in 1/3 cup of sherry or brandy, 1 teaspoon of dried thyme, and salt (like smoked salt) while scraping the bottom to release those tasty browned bits.

4-Pour in 4 cups of the reserved mushroom soaking water and let the mixture simmer gently for 20 to 30 minutes. Meanwhile, sauté the reserved fresh mushrooms in 1 additional tablespoon of butter until browned and set aside for garnish.

5-Finishing Touches: About one-third to one-half of the soup gets pureed in a blender; if it’s too thick, thin it with more soaking water. Return it to the pot and simmer again if needed. Before serving, stir in 2 to 4 tablespoons of heavy cream and plenty of black pepper for that rich finish.

6-Ladle into bowls and garnish with the sautéed mushrooms and fresh herbs like chives or parsley.
