1 teaspoon bouillon powder or salt to taste
½ teaspoon smoked paprika
¼ teaspoon ground nutmeg
3 tablespoons peanut butter or ½ cup roasted ground peanuts
1 cup water
1 tablespoon butter
⅔ cup diced green chiles
1-inch fresh ginger, grated
Instructions
1-First Step: Prep Ingredients
Wash and thoroughly dry 2 to 4 pounds of chicken parts. Season with salt and cayenne pepper. Chop onions finely and mince garlic. Have your tomato sauce or paste, palm oil, and other spices measured and ready.
2-Second Step: Brown the Chicken
Heat ¼ to ½ cup red palm oil (or olive oil) in a large pot over medium-high heat until hot. In batches, brown the chicken on all sides for about 3-4 minutes per side, developing a golden crust. Transfer browned chicken pieces to a plate.
3-Third Step: Sauté Aromatics
Reduce heat to medium-low. In the same pot, sauté the chopped onions for 5-7 minutes until translucent and golden. Add minced garlic and cook for about 30 seconds, until fragrant.
4-Fourth Step: Build the Sauce
Stir in tomato sauce or paste with diced tomatoes if using. Add grated ginger, nutmeg, smoked paprika, and optional green chiles. Cook for 3-5 minutes, allowing the tomato mixture to darken and flavors to meld.
5-Fifth Step: Simmer Chicken
Return the browned chicken to the pot. Add roughly 1 cup water or chicken cooking water to loosen the sauce. Bring to a boil, then reduce to low heat. Cover and simmer for 15-20 minutes, stirring occasionally. Add water as needed if sauce thickens too much.
6-Sixth Step: Enrich with Peanut Butter
Temporarily remove chicken. Stir in peanut butter or ground peanuts until fully smooth in the sauce. Return chicken to pot, simmer uncovered for 5-10 minutes to combine flavors.
7-Final Step: Season and Serve
Adjust seasoning with salt or bouillon powder to taste. Serve hot with rice, plantains, fufu, yams, or vegetables. Garnish with fresh herbs if desired for brightness.
