Ingredients
60 grams room temperature butter
80 grams white miso paste (or 40 grams red miso)
2 tablespoons gochujang paste
1 crushed garlic clove
1 teaspoon chili flakes or crushed red pepper flakes
1 tablespoon rice wine vinegar or apple cider vinegar
2 tablespoons honey
8 chicken thighs or 4 whole chicken legs (skin-on, bone-in)
Kosher salt
Fresh lemon juice or lemon wedges, for serving
Instructions
1. Preheat the oven to 200°C (400°F) with a rack in the middle position.
2. In a bowl, mix butter, miso paste, gochujang paste, crushed garlic, chili flakes, rice wine vinegar, and honey to create a smooth marinade.
3. Place chicken skin-side down on a tray and pat dry. Season lightly with kosher salt.
4. Rub half of the marinade into the flesh side of the chicken thighs or legs.
5. Turn the chicken skin-side up, season again if desired, and bake for 20-40 minutes until cooked through.
6. Remove from the oven and brush the remaining marinade onto the skin.
7. Return to the oven and bake for an additional 15-20 minutes until golden brown and slightly charred.
8. For extra crispiness, switch the oven to grill/broil and grill uncovered for 2-3 minutes.
9. Serve hot by pouring any pan juices over the chicken and adding a squeeze of lemon juice or lemon wedges on the side.
