– 1 lb. Brussels sprouts, trimmed and halved

– 1 tsp chili powder

– 1/4 tsp paprika

– 1 tbsp fresh lime juice

– 2-3 tbsp chopped cilantro

– 1/4 cup cotija cheese, grated

Instructions

First Step: Preheat your oven to 425°F (220°C). Rinse and trim the Brussels sprouts, then halve them to ensure even roasting. Toss the Brussels sprouts with 1 tbsp olive oil, salt, and pepper as outlined in the recipe.

Second Step: Toss the Brussels sprouts and corn kernels with olive oil, chili powder, cumin, salt, and pepper in a large bowl until evenly coated. In a small bowl, mix 2 tbsp mayo, 2 tbsp sour cream or plain Greek yogurt, salt to taste, 1 tbsp fresh lime juice, 1 tsp chili powder, and 1/4 tsp paprika; add this mixture to the warmed corn and cook for 2 more minutes, stirring frequently.

Fifth Step: While roasting, prepare the creamy sauce by mixing the mayonnaise or vegan alternative with lime juice and a pinch of chili powder.
