Ingredients
– 1 lb. Brussels sprouts, trimmed and halved
– 1 tbsp olive oil
– Salt and pepper to taste
– 1 (15 oz.) can corn, rinsed and drained
– 2 tbsp mayo
– 2 tbsp sour cream or plain Greek yogurt
– 1 tsp chili powder
– 1/4 tsp paprika
– 1 tbsp fresh lime juice
– 2-3 tbsp chopped cilantro
– 1/4 cup cotija cheese, grated
Instructions
First Step: Preheat your oven to 425°F (220°C). Rinse and trim the Brussels sprouts, then halve them to ensure even roasting. Toss the Brussels sprouts with 1 tbsp olive oil, salt, and pepper as outlined in the recipe.
Second Step: Toss the Brussels sprouts and corn kernels with olive oil, chili powder, cumin, salt, and pepper in a large bowl until evenly coated. Cook the Brussels sprouts by air frying at 380 degrees Fahrenheit for 6 minutes, then toss and air fry for 4-7 more minutes until crispy; or bake at 400 degrees Fahrenheit for 18-20 minutes, tossing halfway.
Third Step: Spread the mixture on a baking sheet lined with parchment paper, ensuring they are in a single layer for optimal roasting. Warm the corn from the 15 oz. can in a small saucepan over medium heat for a few minutes.
Fourth Step: Roast in the oven for 20-25 minutes, stirring halfway through for even cooking and a nice char. In a small bowl, mix 2 tbsp mayo, 2 tbsp sour cream or plain Greek yogurt, salt to taste, 1 tbsp fresh lime juice, 1 tsp chili powder, and 1/4 tsp paprika; add this mixture to the warmed corn and cook for 2 more minutes, stirring frequently.
Fifth Step: While roasting, prepare the creamy sauce by mixing the mayonnaise or vegan alternative with lime juice and a pinch of chili powder. Combine the corn mixture with the crispy Brussels sprouts and toss gently to coat, then top with 1/4 cup grated cotija cheese and 2-3 tbsp chopped cilantro.
Sixth Step: Once roasted, transfer the Brussels sprouts and corn to a serving bowl and immediately toss with the prepared sauce. Serve warm as a flavorful side dish or a main component, with lime wedges on the side.
Seventh Step: For dietary adaptations, substitute the mayo and cheese with vegan options or use low-calorie alternatives. The preparation time includes 10 minutes prep, 20 minutes cook time, and a total of 30 minutes, making it perfect for busy schedules.
