Ingredients
1/2 lb (250g) skinless, boneless chicken thighs, diced
1 teaspoon salt, divided
1 tablespoon olive oil
4 garlic cloves, crushed or minced
1 teaspoon red pepper flakes
1 teaspoon dried thyme or 2 teaspoons Italian seasoning
1/2 cup sundried tomatoes, chopped
1/2 cup sour cream or 2/3 cup heavy cream
1 cup chicken stock
1 teaspoon fish sauce (optional)
1 lb (500g) potato gnocchi
2 large handfuls (about 2 cups) spinach leaves, roughly chopped
1/2 cup grated Parmesan cheese
1 tablespoon lemon juice
A handful of fresh basil leaves, chiffonade
Black pepper, to taste
Instructions
1. Toss chicken with 1/2 teaspoon salt. Heat olive oil in a pan over medium-high heat and cook chicken until golden and cooked through, about 4-6 minutes per side. Remove and set aside.
2. Add garlic, red pepper flakes, thyme, and remaining 1/2 teaspoon salt to the pan; sauté for about 1 minute. Stir in sundried tomatoes and cook for another minute.
3. Stir in sour cream or heavy cream, chicken stock, and fish sauce to form the sauce base. Add gnocchi, stir to coat, cover, and simmer for 5 minutes until gnocchi are tender.
4. Remove lid, stir gently, return chicken to the pan, add spinach and combine until wilted. Mix in Parmesan cheese, reduce heat, and let sauce thicken.
5. Finish with lemon juice and half the fresh basil, stirring to combine. Serve topped with remaining Parmesan and basil.
