3 large boneless, skinless chicken breasts, sliced lengthwise into thin cutlets (about 8 cutlets)
½ teaspoon salt
¼ teaspoon ground black pepper
6 tablespoons all-purpose flour
2 tablespoons olive oil
6 tablespoons unsalted or salted butter, divided
3 to 4 cloves garlic, minced
½ small yellow onion, finely diced (about ½ cup)
1 teaspoon chili flakes
¼ teaspoon dried oregano
¼ teaspoon dried thyme or 1 tablespoon fresh thyme leaves
1 to 2 tablespoons tomato paste (optional)
to ½ cup chopped sun-dried tomatoes, dry-packed, sliced
1 cup chicken stock or low-sodium chicken broth
½ cup to ¾ cup heavy cream
½ cup freshly grated parmesan cheese, plus extra for serving
1 tablespoon fresh basil leaves or torn fresh basil, for garnish
Optional: ½ cup dry white wine
Freshly ground black pepper and additional salt, to taste

Instructions

1. Season the chicken cutlets evenly with salt and pepper, then dredge in flour, shaking off any excess.
2. Heat olive oil and half the butter in a large skillet over medium-high heat. Cook chicken cutlets in batches for 4 to 5 minutes per side until golden brown. Remove chicken and keep warm.
3. In the same skillet, reduce heat to medium-low and melt the remaining butter. Sauté the diced onion for about 2 minutes. Add minced garlic, chili flakes, and tomato paste if using, cooking until fragrant (about 1 minute).
4. Deglaze the pan with white wine or chicken stock, scraping up browned bits from the bottom; let reduce by half (about 2 minutes).
5. Stir in the remaining chicken stock, sun-dried tomatoes, oregano, thyme, and bring to a gentle simmer.
6. Return the chicken cutlets to the skillet and simmer for about 5 minutes until the sauce thickens slightly and chicken is heated through.
7. Lower heat and stir in heavy cream and parmesan cheese, simmering until the sauce turns creamy and well combined.
8. Garnish with fresh basil leaves and serve warm over pasta, rice, or your preferred side.
