🍅 Bursting with flavor, this Marinated Cherry Tomato recipe is a refreshing and vibrant addition to any table. Spiced with garlic and herbs, it’s the perfect companion for cheeses, grilled meats, or salads.
🧀 Pair this dish with creamy burrata for a delightful contrast, making your culinary experience both satisfying and sophisticated.

  • Total Time: 1 to 2 hours 15 minutes
  • Yield: 4 servings

Ingredients

– 2 cups cherry tomatoes

– 2 tablespoons olive oil

– 1 tablespoon balsamic vinegar

– 1 clove garlic, minced

– 1 teaspoon fresh basil, chopped

– Salt and pepper to taste

Instructions

1-Wash and Drain: Thoroughly wash 2 cups of fresh cherry tomatoes, removing any stems. Drain well to prevent excess water diluting the marinade.

2-Create the Marinade: In a mixing bowl, combine 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1 minced garlic clove, and 1 teaspoon of chopped fresh basil. Stir well to blend the flavors.

3-Combine Ingredients: Add the cherry tomatoes to the marinade, gently tossing to coat every piece evenly.

4-Season: Sprinkle with salt and freshly ground black pepper to taste, mixing to integrate the seasoning thoroughly.

5-Marinate: Cover the bowl and place it in the refrigerator for at least 30 minutes. This resting time allows the tomatoes to absorb the marinade, improving both flavor and texture.

6-Serve: Take the marinated cherry tomatoes out of the fridge, stir gently once more, and serve chilled or bring to room temperature as desired.

Notes

🍅 Use ripe, flavorful cherry or small grape tomatoes for optimal texture and taste. Yellow or heirloom varieties can add color and varying flavor.
🔄 Prepare at room temperature for best flavor infusion; refrigeration is ideal for longer marinating but bring tomatoes back to room temperature before serving to enhance olive oil texture and taste.
🧄 Leftover marinade can be reused the same day for a second batch or as a salad dressing.
