  • Total Time: 35 minutes
  • Yield: 12 muffins

Ingredients

– 1 1/2 cups wheat bran provides fiber and texture

– 1 1/2 cups milk hydrates and binds the ingredients

– 1 teaspoon orange zest adds a fresh, citrusy flavor

– 1 cup white-wheat flour offers structure and a lighter base

– 1/4 cup brown sugar brings subtle sweetness and moisture

– 1 teaspoon baking soda helps with leavening for a fluffy rise

– 2 1/2 teaspoons baking powder enhances rising and lightness

– 1/2 teaspoon salt balances the flavors

– 3/4 teaspoon cinnamon adds warm, spicy notes

– 1/4 teaspoon cardamom provides a unique, aromatic touch

– 1/2 cup maple syrup serves as a natural sweetener with rich maple flavor

– 1/3 cup coconut or vegetable oil contributes moisture and tenderness

– 1 large egg acts as a binder for better cohesion

– 1 teaspoon vanilla extract enhances overall taste with a hint of warmth

Instructions

1-First, soak the wheat bran in milk mixed with orange zest for 10 to 15 minutes to let the flavors meld and soften the bran. While that’s soaking, preheat the oven to 375Β°F (190Β°C) and prepare a muffin tin with liners or non-stick spray to ensure easy removal later.

2-In a separate bowl, combine the flour, brown sugar, baking soda, baking powder, salt, cinnamon, and cardamom, mixing well to distribute the leavening agents evenly. This step helps create a light texture in your muffins. Once your bran mixture has soaked, add the vanilla, egg, maple syrup, and oil to it, stirring until everything blends smoothly.

3-Next, fold the dry ingredients into the wet mixture until just combined, being careful not to overmix for a tender crumb. Optionally, stir in 1/2 cup of raisins or dates for extra flavor and texture at this stage. For the best results, let the batter rest for a few minutes before scooping it into the muffin tins.

4-Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full to allow for rising.

5-Bake in the preheated oven for 18 to 20 minutes, or until the muffins are golden brown and springy to the touch.

6-Remove from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack.
