Ingredients

– 25 jumbo pasta shells

– 5 ounces of lobster meat (from approximately 3 medium tails)

– 2 tablespoons minced red pepper

– 2 tablespoons minced onion

– 1 package of thawed frozen shrimp (71/90 count)

– 1 1/2 teaspoons seasoning blend (similar to Old Bay)

– Freshly ground pepper (to taste)

– Salt (to taste)

– 1 tablespoon butter for sautéing

– 1/4 cup butter for the sauce

– Additional butter for brushing the lobster

– 1/4 cup flour

– 4 cups of 2% milk

– Large pinch of nutmeg

– Few dashes of hot sauce

– 1 1/2 cups Parmesan cheese

– One large beaten egg

– 1/2 cup grated mozzarella

– 1/3 cup ricotta cheese

Instructions

1-Cook the 25 jumbo pasta shells in a pot of salted boiling water until al dente, then drain and rinse them to stop the cooking.

2-Split the lobster tails to remove the 5 ounces of meat, brush with additional butter, and broil for 5-7 minutes until just cooked, then cut into bite-sized pieces.

3-Sauté the 2 tablespoons minced onion and 2 tablespoons minced red pepper in 1 tablespoon butter until soft, then add the package of thawed frozen shrimp and 1 1/2 teaspoons seasoning blend, along with freshly ground pepper and salt to taste.

4-Combine the sautéed mixture with the lobster meat, one large beaten egg, 1/2 cup grated mozzarella, and 1/3 cup ricotta cheese to form the filling.

5-Prepare the cheese sauce by making a roux with 1/4 cup butter and 1/4 cup flour, then gradually whisk in 4 cups of 2% milk until it thickens and becomes creamy. Season with a large pinch of nutmeg, a few dashes of hot sauce, and stir in 1 1/2 cups Parmesan cheese.

6-Stuff each pasta shell with the seafood and cheese mixture, place them in a greased 9×13-inch baking dish, pour the cheese sauce over the top, and sprinkle with additional seasoning.

7-Bake at 350°F for 30-35 minutes until bubbly and golden. For an extra touch, garnish with chopped green onions if you like.
