– ½ pound (227 g) cooked shrimp chopped in half

Instructions
1-First, cook the ¾ pound (340 g) spiral pasta like rotini or fusilli according to the package instructions until it’s al dente, then drain it.
2-In a saucepan, melt 2 tablespoons of the 4 tablespoons (56 g) unsalted butter over medium heat, then whisk in the ¼ cup (31 g) all-purpose flour to make a roux, stirring for about 2 minutes.
3-Gradually add the 2 cups (473 ml) of 2% milk to the roux, whisking constantly until it thickens and coats the back of a spoon, which takes around 5-7 minutes.
4-Lower the heat and stir in the 6 ounces (170 g) grated Gruyere cheese and 4 ounces (113 g) grated white cheddar cheese until they’re fully melted and smooth.
5-Season the sauce with 1 teaspoon salt and ½ teaspoon freshly ground black pepper, then gently fold in the 1 pound (454 g) chopped cooked lobster meat and ½ pound (227 g) chopped cooked shrimp.
6-Mix the cooked pasta into the cheese and seafood sauce until everything is evenly coated.
7-Transfer the mixture to a greased casserole dish and top it with the ½ cup (54 g) Italian-style breadcrumbs mixed with the remaining melted butter.
8-Bake at 375 °F (191 °C) for 30-35 minutes until it’s bubbly and browned on top.
