1 pound cooked lobster meat (knuckle, claw, and tail)
1/2 tablespoon lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 finely diced celery rib (optional)
1 tablespoon fresh chives (optional)
Dash of hot sauce (optional)
1/2 teaspoon lemon zest (optional)
2 to 3 tablespoons melted butter
4 New England-style split-top hot dog buns
Lettuce leaves (optional)
Mayonnaise (optional for cold version)
Instructions
1. Prepare the lobster meat by draining and drying it well.
2. For the Maine-style roll, mix the lobster meat with mayonnaise, lemon juice, salt, pepper, and optional celery, chives, hot sauce, and lemon zest. Chill the mixture if desired.
3. For the Connecticut-style roll, warm the lobster meat in melted butter and season with lemon juice, salt, and pepper.
4. Heat a skillet over medium heat, and dip the sides of the buns in melted butter.
5. Toast the buns in the skillet until golden and crispy.
6. If using, place a lettuce leaf inside each toasted bun.
7. Fill each bun with the prepared lobster mixture.
8. Serve immediately, garnished with chives or additional lemon zest if desired.
