Instructions

1- Preheat oven to 325Β°F (163Β°C) and grease and flour your loaf pans to prevent sticking.

2- Whisk together 3 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon baking soda in a bowl for the dry mix.

3- In a large bowl, combine 2 cups granulated sugar and the zest of 2 large lemons, rubbing them together until fragrant for that fresh citrus kick.

4- Add 3 large eggs, 1 cup light olive oil, 1 tablespoon fresh lemon juice, and 1 1/2 teaspoons vanilla extract to the sugar mixture; stir until smooth and well blended.

5- Gradually add the dry ingredients to the wet mixture and stir until just combined the batter will be thick, so don’t overmix.

6- Gently stir in 2 cups grated zucchini to keep the bread moist and nutritious.
