Ingredients

– 2-3 teaspoons fresh lemon zest (from one large lemon)

– 1 cup butter, softened to room temperature

– 1 Β½ cups granulated sugar

– 1 tablespoon fresh lemon zest (from one large lemon)

– 1 large egg

– ΒΌ cup fresh lemon juice

– Β½ teaspoon vanilla extract

– 2 ΒΎ cups plus 2 tablespoons all-purpose flour (adjust flour amount if baking at high elevation)

– Β½ teaspoon baking soda

– Β½ teaspoon baking powder

– Β½ teaspoon salt

Instructions

1-Prepare Lemon Sugar: Combine granulated sugar and lemon zest in a bowl. Rub the zest into the sugar with your fingers until fragrant and evenly combined. Set aside.

2-Preheat & Prep: Preheat oven to 350 degrees Fahrenheit. Line two large rimmed baking sheets with parchment paper and lightly grease with cooking spray.

3-Cream Butter & Sugar: In a mixing bowl, cream together butter, granulated sugar, and lemon zest until light and fluffy, about 3-4 minutes. Scrape sides as needed.

4-Add Wet Ingredients: Add egg, lemon juice, and vanilla extract, mixing 1-2 minutes until batter lightens in color. Scrape sides again. Slight curdling is normal.

5-Add Dry Ingredients: Add flour, baking soda, baking powder, and salt. Mix just until combined, avoiding overmixing.

6-Shape & Coat: Scoop cookie dough into rounded balls about 2 tablespoons each. Break up any clumps in lemon sugar before rolling dough balls generously in lemon sugar. Place on baking sheets about two inches apart.

7-Bake: Bake 9-11 minutes until cookies are slightly crackly on top but not browned on edges or bottom. Adjust baking time or temperature if needed to prevent overbrowning.

8-Cool: Cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
