1/2 cup flaked coconut
3/4 cup all-purpose flour
1 tablespoon granulated sugar
6 tablespoons cold salted butter, cubed

4 large egg yolks
1/4 cup cornstarch
2 (14-ounce) cans coconut milk, unsweetened
1/2 cup plus 1 tablespoon granulated sugar
1/4 teaspoon salt
2 tablespoons salted butter
1 tablespoon vanilla extract
1 cup shredded coconut
1 cup flaked coconut, toasted
Zest of 1 lemon
Optional: 1 teaspoon lemon zest or 1½-2 tablespoons lemon extract or 1/4 cup fresh lemon juice
1 cup heavy cream
1 tablespoon sugar
Lemon zest mixed with 1 tablespoon sugar
1/4 cup toasted shredded coconut for garnish
Instructions
1. Preheat oven to 375°F (190°C). Grease an 8 or 9-inch tart pan or pie plate.
2. For the crust, pulse flaked coconut into semi-fine crumbs. Combine with flour, sugar, and butter until dough forms. Add cold water if needed. Press into pan. Bake for 12–14 minutes until golden.
3. For filling, whisk egg yolks and cornstarch. Heat coconut milk, sugar, and salt. Gradually add egg mixture, whisk until thickened, about 8–10 minutes. Stir in vanilla, butter, lemon zest, and coconut.
4. Pour filling into crust. Cover and refrigerate for at least 3 hours to set.
5. Before serving, whip cream with sugar until soft peaks form. Spread over pie. Sprinkle with lemon sugar and toasted coconut.
