1/3 cup (80ml) vegetable oil (or butter/oil alternatives such as melted butter or coconut oil)
1/3 cup (80g) sour cream or plain Greek yogurt, at room temperature
2/3 cup (160ml) whole milk, at room temperature
3 tablespoons fresh lemon juice
1 tablespoon lemon zest (approximately zest of 1 large lemon)

Optional Glaze Ingredients:
1/2 cup (60g) confectioners’ or powdered sugar
1 tablespoon fresh lemon juice
Optional: candied lemon slices for garnish

Instructions

Preheat the oven to 350°F (175°C). Prepare a 9×5-inch loaf pan by greasing it or lining with parchment paper and spraying with nonstick spray. In a medium bowl, whisk together the dry ingredients: flour, poppy seeds, baking soda, baking powder, and salt. In a separate large bowl, beat the egg and sugar until combined, then add vegetable oil, sour cream (or yogurt), milk, lemon juice, and lemon zest. Gently fold the dry ingredients into the wet ingredients just until combined, leaving a few small lumps to avoid overmixing. Pour the batter into the prepared pan and bake for 50 to 60 minutes. If the top browns too quickly, loosely tent with foil halfway through baking. Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs. Cool the bread completely on a wire rack.

For the glaze, mix confectioners’ sugar and lemon juice until smooth. Drizzle over warm or fully cooled bread. Garnish with candied lemon slices if desired (use as decoration only; don’t bake on the bread).
