2 cups (about 250g) all-purpose flour
4 teaspoons poppy seeds (or substitute with 2 tablespoons if preferred for dryer texture)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup (150g) granulated sugar
1/3 cup (80ml) vegetable oil or 1/2 cup (115g) melted butter (can substitute coconut oil)
1/3 cup (80g) sour cream or plain/Greek yogurt at room temperature
2/3 cup (160ml) whole milk at room temperature
3 tablespoons fresh lemon juice
1 tablespoon lemon zest (zest of about 1 medium lemon)

Glaze Ingredients (optional):
1/2 to 1 cup (60-120g) confectioners’ or powdered sugar
1 to 3 tablespoons fresh lemon juice (adjust for desired thickness)

Instructions

1. Preheat oven to 350°F (175-180°C). Prepare a 9×5-inch loaf pan by greasing or lining with parchment paper.
2. In a large bowl, whisk together the flour, poppy seeds, baking soda, baking powder, and salt.
3. In a separate bowl, beat the egg and sugar until just combined. Add the oil (or melted butter), sour cream (or yogurt), milk, lemon juice, and lemon zest, mixing well.
4. Pour the wet ingredients into the dry ingredients and whisk gently until just combined; small lumps are okay to preserve tenderness and avoid overmixing.
5. Pour the batter into the prepared pan, filling it about two-thirds full to prevent overflow. Bake for 50-60 minutes, covering loosely with foil about halfway through if the top browns too quickly.
6. Test doneness with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
7. Let the bread cool completely in the pan on a wire rack.
8. For the glaze, mix confectioners’ sugar and lemon juice until smooth. Drizzle over the warm or cooled bread to allow it to seep in. For a thicker glaze, increase sugar quantity and adjust lemon juice accordingly.
9. Slice and serve. Store leftover bread at room temperature for up to 2 days or refrigerate for up to 1 week. The bread can also be frozen glazed or unglazed for up to 3 months; thaw overnight in the refrigerator.
