ΒΎ cup granulated sugar
β…“ cup vegetable oil

3 tablespoons fresh lemon juice

Β½ teaspoon vanilla extract
For the optional glaze:
Β½ cup confectioners’ sugar
1 tablespoon lemon juice
3 teaspoons milk

Instructions

Preheat the oven to 350Β°F (175Β°C). Grease and flour a 9×5 inch loaf pan or spray with nonstick spray.
In a large bowl, whisk together flour, poppy seeds, baking soda, baking powder, and salt.
In a separate bowl, whisk together the egg and sugar. Add oil, sour cream, milk, lemon juice, lemon zest, and vanilla; whisk until smooth.
Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Do not over-mix.
Pour batter into the prepared loaf pan. Bake for 50-60 minutes, covering with foil midway to prevent over-browning.
Check doneness by inserting a toothpick in the center. It should come out clean.
Cool the bread at room temperature for 10 minutes, then remove from pan and cool completely on a wire rack.
Prepare the glaze: whisk together confectioners’ sugar and lemon juice. Drizzle over the cooled bread and let it set.
