Instructions
1-First, combine the crushed graham crackers, melted butter, and granulated sugar in a medium bowl, and mix well. Press the mixture into a greased 9-inch pie dish and bake it at 350Β°F for 8 minutes, then remove from the oven.
2-While the crust bakes, prepare the filling by mixing the sweetened condensed milk, egg yolks, lemon juice, and kosher salt in a stand mixer on medium speed for 3-4 minutes until itβs creamy and smooth.
3-Pour the filling into the baked crust and bake at 350Β°F for 10 minutes. Let the pie rest on the counter for about 10 minutes, then refrigerate for 1-2 hours to set.
4-Before serving, whip the heavy whipping cream, confectionersβ sugar, and vanilla extract in a chilled bowl until fluffy, about 3 minutes, then spread it over the chilled pie and garnish with lemon zest if you like.
