Ingredients
– 1/2 cup butter, slightly softened
– 8 oz cream cheese, slightly softened
– 1/4 cup fresh lemon juice
– 1 heaping tablespoon lemon zest
– 5 cups powdered sugar
Instructions
1-First, juice and zest one large lemon to get 1/4 cup of fresh lemon juice and 1 heaping tablespoon of zest; this step brings in the bright flavor that makes the frosting special.
2-Add the cream cheese, butter, lemon juice, and lemon zest to a mixer, ensuring both the butter and cream cheese are slightly softened by leaving them out for 30-60 minutes.
3-Mix on medium speed for about 2 minutes until fully combined, scraping the sides of the bowl as needed to avoid any lumps.
4-Add 5 cups of powdered sugar sift it if itβs lumpy or mix on low to break up lumps and cover the mixer with a towel to keep things tidy; mix on the lowest setting for 30 seconds until incorporated.
5-Scrape the sides again, then increase to medium-high speed for 30-45 seconds to achieve a light and fluffy texture; at this point, you can optionally add a small amount of yellow food coloring and mix it in.
6-Taste and adjust the lemon flavor or consistency as needed, then refrigerate the frosting for at least an hour to firm it up and let the flavors develop fully.

π Use fresh lemon juice and zest for the best flavor; bottled juice can substitute in a pinch.
βοΈ Refrigerate the frosting for an hour if too thin; add powdered sugar or cornstarch if needed.
π This frosting is thinner and doesn’t crust like traditional buttercream, ideal for simple swirls but not detailed decorating.
