7 to 10 cups chicken broth
1 ΒΌ cups pearl couscous
1 parmesan cheese rind (optional)
1 tablespoon freshly grated lemon zest
Β½ to 1 lemon juiced
ΒΌ cup chopped fresh herbs such as parsley, dill, or chives
Additional parmesan cheese and fresh herbs for garnish
Crusty bread or oyster crackers for serving

Instructions

1. In a large stockpot over medium-low heat, melt butter or heat olive oil.
2. Add diced onion, garlic, carrots, celery, and ginger to the pot. Season with salt and pepper, and sautΓ© until vegetables are softened and fragrant.
3. Stir in the chopped chicken, mixing well.
4. Pour in the chicken broth and add the parmesan rind if using. Bring the mixture to a boil.
5. Add pearl couscous, reduce the heat to a simmer, and cook for 10 to 15 minutes until the couscous is tender, stirring occasionally.
6. Stir in lemon zest, lemon juice, and chopped fresh herbs towards the end of cooking.
7. Adjust seasoning with salt and pepper to taste.
8. Serve garnished with additional parmesan cheese and fresh herbs, accompanied by crusty bread or oyster crackers if desired.
