Ingredients

3 cups all-purpose flour (360g), with 2 1/2 cups used for the crust and 1/2 cup for the filling

2/3 cups powdered sugar (66g) for the shortbread, plus extra for dusting at the end

1/2 teaspoon salt

12 tablespoons unsalted butter, melted (170g)

Zest of three lemons (about 3 tablespoons)

3 cups sugar (600g)

8 large eggs, at room temperature

1 cup fresh lemon juice (240mL)

Instructions

1-Whisk together 2 1/2 cups flour, powdered sugar, and salt in a bowl.

2-Pour in the melted butter and mix until combined; you can add a teaspoon of vanilla if you like.

3-Press the dough evenly into the prepared pan and bake for 20 minutes or until it’s light golden brown.

4-While the crust bakes, pulse the sugar and lemon zest in a food processor until the zest is fully mixed in and the sugar turns light yellow. If you don’t have a processor, finely mince the zest and stir it into the sugar.

5-In a large bowl, combine the lemon sugar mixture with the remaining 1/2 cup flour, lemon juice, and eggs. Mix everything thoroughly until smooth.

6-Pour the filling over the warm crust and bake for about 25 minutes, rotating the pan halfway through. The center should be just set when done.

7-Cool the bars for at least one hour, then refrigerate for two hours to chill and set properly.

8-Finally, dust with powdered sugar before cutting. Use a sharp, damp knife, cleaning and re-wetting it between cuts for neat slices.
