Instructions

1-First, in a large saucepan over medium-low heat, combine honey, dark brown sugar, granulated sugar, and butter. Stir until the butter melts and the sugars dissolve, then remove from heat and let cool for 15 minutes. This step helps blend the flavors without any rush.

2-Next, in a medium bowl, whisk together flour, baking soda, cinnamon, and ginger to ensure everything mixes evenly. Add the egg, orange juice, orange zest, vanilla, and optional almonds and candied orange peel to the cooled honey-sugar mixture, stirring well to combine.

3-Then, add the flour mixture and stir to form a sticky dough, which is normal for this recipe. Cover the dough directly with plastic wrap and refrigerate for 8 hours or overnight to let the spices develop fully.

4-After chilling, preheat the oven to 350Β°F (175Β°C) and butter and flour a 9β€³x9β€³ baking pan. Let the dough come to room temperature for about 30 minutes before spreading it evenly in the pan.

5-Bake for 20-30 minutes until a toothpick inserted in the center comes out clean, then mix the glaze ingredients until smooth. Remove the bars from the oven and spread the glaze evenly over the warm bars, letting them cool completely to set before cutting and storing.
