Instructions
First Step: Prepare Your Workspace and Ingredients
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray and spread ½ cup of marinara sauce evenly across the bottom. Fill a large pot with salted water and bring it to a boil to cook the lasagna noodles until al dente, about 8-10 minutes.

In a mixing bowl, combine 15 oz ricotta cheese, 1 large egg, 1½ cups shredded mozzarella, ¼ cup Parmesan, oregano, basil, parsley, salt, and black pepper. For added nutrition and variation, fold in 2-3 cups cooked and drained spinach if desired.
Fifth Step: Assemble the Roll Ups
Spread approximately 2½ tablespoons of the cheese mixture evenly over each lasagna noodle. Next, top with about ¼ cup of the meat sauce. Roll each noodle tightly and place seam-side down in the prepared baking dish.
Sixth Step: Add Sauce and Cheese Topping
Once all noodles are arranged, pour the remaining meat sauce evenly over the roll ups. Sprinkle the remaining ½ cup shredded mozzarella and ¼ cup Parmesan cheese evenly atop the dish.
Final Step: Bake and Serve
Cover the baking dish with foil lightly sprayed with nonstick spray. Bake at 375°F for 35 minutes. Optionally, remove foil and broil at 450°F for 1-2 minutes to create a golden-brown top watch carefully to avoid burning. Garnish with freshly chopped parsley before serving.
