3 cups russet potatoes, peeled and cubed
1 tablespoon olive oil
1 pound smoked kielbasa sausage, sliced
ΒΌ cup all-purpose flour
ΒΌ cup unsalted butter
2 teaspoons minced garlic
1Β½ cups 2% milk
Β½ cup heavy cream
1 cup chicken broth
Β½ can cheddar cheese soup
2 cups shredded sharp cheddar cheese, plus extra for topping
Β½ teaspoon ground cumin
Β½ teaspoon garlic powder
1 teaspoon salt
Β½ teaspoon cracked black pepper
Optional: 1 cup diced onions
Optional: Β½ cup water
Optional: 1 teaspoon seasoning blend

Instructions

1. Preheat the oven to 350Β°F (175Β°C). Lightly grease a 9 x 13 inch baking dish with non-stick cooking spray.
2. Boil the peeled and cubed potatoes in water until tender but still firm, about 7 minutes. Drain and transfer to the prepared baking dish.
3. Heat olive oil in a large pan over medium heat. Brown the kielbasa sausage slices for about 5 minutes until crisp and browned. Add to the casserole with the potatoes.
4. In the same pan, melt the butter over medium-low heat. Stir in the flour and cook until lightly golden, about 2 minutes.
5. Add minced garlic and cook briefly. Gradually whisk in milk, cream, chicken broth, cumin, garlic powder, salt, black pepper, and cheddar cheese soup. Cook until the sauce thickens, about 3 to 4 minutes.
6. Remove sauce from heat. Stir in shredded cheddar cheese until melted.
7. Pour the cheese sauce over the potatoes and kielbasa in the baking dish, stirring to coat everything well.
8. Sprinkle additional cheddar cheese on top if desired.
9. Bake uncovered for about 30 minutes until golden brown and bubbly.
