3/4 cup vegetable oil (can substitute with canola or avocado oil)

3/4 cup pineapple juice

4 large eggs (room temperature)

2 cups powdered sugar for the glaze

4 tablespoons unsalted butter (can substitute with margarine or regular butter, but unsalted is preferred, for the glaze)

Instructions

1-First, preheat the oven to 325Β°F and grease and flour a 10 to 12-cup Bundt pan to keep everything from sticking. In a large bowl, use an electric mixer to beat the cake mix, 3/4 cup vegetable oil, 3/4 cup pineapple juice, and 4 large eggs for about 2 minutes until it’s all nicely combined, then pour that batter into your prepared pan.

2-Next, pop it in the oven and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean and the cake starts pulling away from the sides. While the cake cools a bit in the pan, whip up the glaze by mixing 2 cups powdered sugar, 3/4 cup pineapple juice, and 4 tablespoons unsalted butter in a small saucepan. Cook it over medium-low heat, stirring often until the butter melts.

3-Once that’s done, grab a skewer or toothpick to poke holes halfway into the warm cake, about 1 to 2 inches apart, so the glaze can soak in real good. Pour the warm glaze evenly over the cake while it’s still in the pan, making sure to be generous for that extra moisture. Let it sit for 15 to 20 minutes until the glaze is mostly absorbed, then invert the cake onto a serving platter and let it cool completely before diving in.
