– 2 chicken breasts, skinless and boneless (approximately 220g/7oz each)

– 1/4 teaspoon cooking or kosher salt

– 1/2 teaspoon smoked paprika or ordinary paprika

– 1 tablespoon extra-virgin olive oil

– 60g (2 oz) cream cheese

– 1/2 cup shredded mozzarella cheese (or another melty cheese)

– 1/4 cup finely shredded parmesan

– 2 jalapenos, deseeded and finely diced

– 1/2 teaspoon garlic powder

– 1/2 teaspoon black pepper

– 1/2 teaspoon cooking or kosher salt

Instructions

1-First, preheat your oven to 180°C/350°F (160°C fan) and get your workspace ready by pulling together all the ingredients and tools. This sets the stage for smooth cooking and helps you stay organized, which is a game-changer for busy parents juggling multiple tasks.

2-Next, cut a pocket into each chicken breast by slicing through the side, keeping the smooth edge intact for better stuffing and presentation. Don’t worry if it’s not perfect on the first try practice makes it fun!

3-Stuffing and Seasoning Steps Microwave the cream cheese for 30 seconds to soften it, then mix it with the mozzarella, parmesan, diced jalapenos, garlic powder, black pepper, and salt until it’s creamy and easy to handle. Stuff this mixture firmly into the chicken pockets and secure with 2 to 3 toothpicks each; a little oozing is okay and actually adds those crispy bits we love.

4-Season the outside of the chicken with the paprika and salt for a light touch that lets the stuffing shine.
