Ingredients

– 3 to 5 pounds beef chuck roast

– 1 tablespoon oil

– 1 teaspoon salt

– 1 teaspoon onion powder

– 1 teaspoon garlic powder

– Β½ teaspoon black pepper

– Β½ teaspoon smoked paprika for extra kick

– 1 pound baby red potatoes

– 4 large carrots, chopped into large chunks

– 1 large yellow onion, chopped

– 4 cups beef broth

– 2 tablespoons Worcestershire sauce

– ΒΌ cup water

– 2 tablespoons corn starch

Instructions

1-Season the chuck roast with 1 teaspoon salt, 1 teaspoon onion powder, 1 teaspoon garlic powder, Β½ teaspoon black pepper, and Β½ teaspoon smoked paprika.

2-Heat 1 tablespoon oil in the Instant Pot on sautΓ© mode and sear the roast until browned, about 3 to 4 minutes per side.

3-Add 1 pound baby red potatoes, 4 large chopped carrots, and 1 large chopped yellow onion around the roast.

4-Pour in 4 cups beef broth and 2 tablespoons Worcestershire sauce.

5-Secure the lid and pressure cook on high for 60 to 80 minutes.

6-Let the pressure release naturally for 10 minutes, then quick release any left.

7-Remove the lid, transfer the roast and veggies to a platter, and shred the roast with forks.

8-Strain the broth, set to simmer, and bring it to a boil.

9-Whisk 2 tablespoons corn starch into ΒΌ cup water, stir into the broth, and cook until it thickens into gravy.

10-Serve everything topped with gravy and add fresh herbs if you like.
