  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

– 1 pound medium shrimp (peeled and deveined)

– 2 tablespoons cornstarch (to coat the shrimp evenly)

– 1 1/2 tablespoons peanut oil (or canola oil, divided)

– 2 cups chopped fresh green beans

– 2 sliced green onions

– 1 1/2 tablespoons chili paste

– 2 teaspoons soy sauce

– 1 teaspoon rice vinegar

– 1/2 teaspoon oyster sauce

– 1 teaspoon honey

– 1/2 cup chicken stock

– 2 large garlic cloves (minced)

– Sesame seeds (for optional garnish)

Instructions

1-Prepare and coat shrimp: First off, prep your ingredients to keep things moving smoothly in the kitchen. Toss 1 pound of medium shrimp in 2 tablespoons cornstarch for that nice coating, then get your sauce ready by whisking together 1 1/2 tablespoons chili paste, 2 teaspoons soy sauce, 1 teaspoon rice vinegar, 1/2 teaspoon oyster sauce, 1 teaspoon honey, 1/2 cup chicken stock, and 2 large minced garlic cloves.

2-Stir-fry shrimp: Heat 1 1/2 tablespoons peanut oil in a skillet or wok over high heat it’s all about that high temp for the best stir-fry. Start by stir-frying the shrimp for 2-3 minutes until they’re opaque, then set them aside.

3-Cook green beans and onions: Next, add the 2 cups chopped fresh green beans and cook them for 2-3 minutes before tossing in the 2 sliced green onions for another minute to keep that crunch.

4-Add sauce and combine: Now, bring everything together by returning the shrimp to the pan and mixing it all up. Pour in your sauce and let it cook for about 2 minutes until it thickens just a bit.

5-Serve immediately: Serve it right away over rice or rice noodles, and sprinkle on some sesame seeds if you like.
