🍯 Enjoy a sweet classic with this Honey Pie recipe featuring a creamy honey-flavored custard nestled in a flaky crust.
🥧 Perfect for homemade dessert lovers, it combines smooth textures and rich flavors that everyone will adore.

  • Total Time: 3 hours 15 minutes
  • Yield: 8 servings

Ingredients

– Half of a 9-inch pie dough (homemade or store-bought refrigerated)

– 2 cups milk

– 1 cup heavy cream

– 3 large eggs

– ½ cup pure honey

– ⅓ cup light brown sugar, packed

– ⅓ cup granulated sugar

– 3 tablespoons cornstarch

– 1 teaspoon vanilla extract

– ⅛ teaspoon salt

– Whipped cream, optional

– Honey for garnish, optional

Instructions

1-Preheat the oven: preheat the oven to 350°F and chill your pie dough for at least one hour to keep it flaky. Roll the dough to fit a 9-inch pie dish, trim the edges, flute them for a nice finish, and prick the bottom with a fork. Line it with parchment paper and add pie weights, then blind bake for 20 minutes before removing the weights and baking another 8 minutes.

2-Prepare the custard filling: heat 2 cups milk and 1 cup heavy cream over medium-low heat until it steams gently. In a separate bowl, whisk together 3 large eggs, ½ cup pure honey, ⅓ cup packed light brown sugar, ⅓ cup granulated sugar, 3 tablespoons cornstarch, 1 teaspoon vanilla extract, and ⅛ teaspoon salt until smooth. Slowly mix in the warm milk blend while stirring, then return it to the saucepan and cook over medium-low heat, stirring constantly, until it thickens and coats a spoon, about 8 minutes.

3-Final Baking and Cooling Steps: increase the oven to 375°F, strain the custard into the hot crust to remove any lumps, and bake for 12-15 minutes until the edges set but the center stays slightly jiggly. Let it cool on a wire rack for about 2 hours before serving. The total prep time is around 25 minutes, with 50 minutes of cooking and 2 hours cooling, bringing the full process to about 3 hours and 15 minutes.

4-Finish the pie: once cooled, top with whipped cream and a drizzle of honey if you like, and enjoy it fresh or refrigerated for later.
