4 boneless, skinless chicken breasts
2 tablespoons vegetable oil
2 tablespoons mustard
2 tablespoons honey
2 teaspoons curry powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon cinnamon or allspice
1/4 cup chopped fresh coriander or parsley
Optional: 1/3 cup soy sauce, 2 tablespoons fresh lime juice, 2 tablespoons minced garlic, 2 tablespoons minced fresh ginger, 1 cup low-sodium chicken broth, 1 tablespoon cornstarch
Instructions
1. Preheat grill to medium heat and lightly oil the grates.
2. In a bowl, combine oil, mustard, honey, curry powder, salt, garlic powder, pepper, and cinnamon. Whisk until blended.
3. Coat chicken with the marinade. For better flavor, marinate in the fridge for 1 to 2 hours.
4. Grill chicken for 4 to 6 minutes per side. Check internal temperature reaches 165°F.
5. For sauce: Reserve marinade, boil in a saucepan, add cornstarch with broth, simmer until thick.
6. Serve chicken with sauce, garnished with coriander.
