Ingredients

1 whole chicken (about 4 pounds)
5 clementines, halved
3 sprigs rosemary
3 sprigs thyme
1 teaspoon salt
½ teaspoon black pepper
3 tablespoons hoisin sauce
1 teaspoon chili garlic sauce
1 clove garlic, minced
⅓ cup soy sauce
1 tablespoon honey
1 tablespoon sesame oil
¼ teaspoon minced fresh ginger

Instructions

1. Preheat the oven to 450°F (230°C).
2. In a bowl, whisk together the hoisin sauce, chili garlic sauce, minced garlic, soy sauce, honey, sesame oil, and ginger until smooth.
3. Pat the chicken dry, then season it inside and out with salt and pepper.
4. Stuff the chicken cavity with half the clementine halves, rosemary, and thyme.
5. Tie the drumsticks together and tuck the wing tips under the bird.
6. Place the chicken breast side up in a roasting pan and arrange the remaining clementine halves around it.
7. Brush the chicken generously with the sauce.
8. Roast at 450°F for 20 minutes, then brush with more sauce.
9. Reduce oven temperature to 350°F, tent the chicken with foil, and continue roasting for 50 to 60 minutes, brushing with sauce halfway through.
10. Remove the foil and roast uncovered for an additional 10 minutes or until the internal temperature reaches 170°F in the thickest part of the thigh.
11. Tent the chicken with foil to rest for 10 minutes.
12. Before serving, squeeze roasted clementine juice over the chicken and garnish with chopped green onions if desired.
