Ingredients

1 whole chicken (about 4 pounds or 1.8 kg)
5 clementines or small oranges, halved
3 sprigs rosemary
3 sprigs thyme
1 teaspoon salt
Β½ teaspoon black pepper
3 tablespoons hoisin sauce
1 teaspoon chili garlic sauce
1 teaspoon minced garlic (about 1 clove)
β…“ cup soy sauce (approximately 80 ml)
1 tablespoon honey
1 tablespoon pure toasted sesame oil
ΒΌ teaspoon minced fresh ginger
Optional: Diced green onions or scallions for garnish

Instructions

1. Preheat the oven to 450Β°F (230Β°C).
2. In a bowl, whisk together hoisin sauce, chili garlic sauce, minced garlic, soy sauce, honey, sesame oil, and ginger.
3. Pat the chicken dry and season inside and out with salt and pepper.
4. Stuff the chicken cavity with half of the clementine halves, rosemary, and thyme.
5. Tie the drumsticks together and tuck the wing tips under the bird for even cooking.
6. Place the chicken breast side up in a roasting pan, arranging the remaining clementine halves around it.
7. Brush the chicken generously with the prepared sauce.
8. Roast at 450Β°F for 20 minutes, basting with more sauce.
9. Lower the oven temperature to 350Β°F (175Β°C), tent the chicken with foil, and roast for an additional 50 to 60 minutes, basting halfway through.
10. Remove the foil, brush with remaining sauce, and roast uncovered for another 10 minutes or until the chicken reaches 170Β°F (77Β°C) internally.
11. Remove from the oven, tent with foil, and let it rest for 10 minutes.
12. Squeeze roasted clementine juices over the chicken before serving.
13. Garnish with diced green onions if desired.
