Ingredients
1 whole chicken (approximately 4 lb or 1.8 kg)
5 clementines (or any small orange variety), halved
3 sprigs rosemary
3 sprigs thyme
4 slices bacon (optional for extra flavor)
1 teaspoon salt
½ teaspoon black pepper
3 tablespoons hoisin sauce
1 teaspoon chili garlic sauce (or ½ teaspoon Sambal Oelek as a substitute)
1 to 1½ teaspoons minced garlic (about 1 clove)
⅓ cup soy sauce (about 80 ml)
1 tablespoon honey
1 tablespoon sesame oil (toasted or regular)
¼ teaspoon minced fresh ginger
1 teaspoon chili paste (optional for spiciness)
⅓ cup orange marmalade (optional for extra citrus sweetness)
Chopped scallions or green onions (for garnish)
Instructions
1. Preheat your oven to 450°F (232°C).
2. Prepare the hoisin glaze by mixing together hoisin sauce, chili garlic sauce, minced garlic, soy sauce, honey, sesame oil, minced ginger, optional chili paste, and orange marmalade. Set aside.
3. Rinse and pat the chicken dry thoroughly. Season inside and out with salt and pepper.
4. Stuff half of the clementine halves along with rosemary and thyme into the chicken cavity.
5. If using bacon, lay slices over the chicken breast and tuck clementine pieces beneath the bacon. Arrange remaining clementine halves around the chicken in a roasting pan.
6. Tuck the wing tips under and tie the drumsticks with kitchen twine for even cooking.
7. Place the chicken breast-side up in a roasting pan. Brush a generous layer of the hoisin glaze over the chicken and clementines.
8. Roast at 450°F for 20 minutes. Then, brush with more glaze, reduce oven to 350°F (177°C), cover loosely with foil, and roast for 50-60 minutes, glazing halfway through.
9. Remove the foil, brush with remaining glaze, and roast for an additional 10 minutes or until internal temperature reaches 170°F (77°C).
10. Remove from oven, tent with foil, and let rest for 10 minutes.
11. Squeeze a roasted clementine half over the chicken and garnish with green onions.
