Ingredients

1 whole chicken (approximately 4 lbs / 1.8 kg)
5 clementines, halved
3 sprigs rosemary
3 sprigs thyme
1 tsp salt
Β½ tsp black pepper
3 Tbsp hoisin sauce
1 tsp chili garlic sauce
1 tsp minced garlic
β…“ cup soy sauce
1 Tbsp honey
1 Tbsp sesame oil
ΒΌ tsp minced fresh ginger
Optional: 4 slices bacon
Garnish: chopped scallions or green onions

Instructions

1. Preheat oven to 450Β°F (230Β°C).
2. In a bowl, whisk together hoisin sauce, chili garlic sauce, minced garlic, soy sauce, honey, sesame oil, and minced ginger to create the glaze.
3. Pat the chicken dry and season inside and out with salt and pepper.
4. Place half of the clementine halves along with rosemary and thyme sprigs inside the chicken cavity.
5. Tuck the wing tips under the back and tie the drumsticks with twine.
6. If using bacon, lay slices lengthwise across the chicken breast.
7. Arrange the remaining clementine halves around the chicken in a roasting pan.
8. Brush the glaze generously over the entire chicken and the oranges around it.
9. Roast for 20 minutes at 450Β°F, then brush with another layer of glaze.
10. Reduce oven temperature to 350Β°F (175Β°C), loosely tent the chicken with foil, and continue roasting for 50-60 minutes, basting with more glaze halfway through.
11. Remove foil tent, brush on remaining glaze, and roast uncovered for another 10 minutes or until the internal temperature of the thickest part of the thigh reaches 170Β°F (77Β°C).
12. Remove from oven and tent loosely with foil; allow resting for 10 minutes.
13. Before serving, squeeze a roasted clementine half over the chicken to add fresh citrus brightness. Garnish with chopped scallions or green onions.
