Ingredients

1 1/2 cups white, spelt, or oat flour

1/2 cup protein powder

1 teaspoon baking soda

3/4 teaspoon baking powder

3/4 teaspoon salt

1/2 teaspoon cinnamon

1 1/2 cups mashed overripe banana

1/2 cup yogurt or additional banana

1/2 cup pure maple syrup, honey, or agave

1/3 cup oil or water

2 teaspoons pure vanilla extract

Optional: chocolate chips, walnuts, coconut, etc.

Instructions

First Step: Grease a 9×5 inch loaf pan and line the bottom with parchment paper. Preheat oven to 350°F (175°C).

Second Step: In a large bowl, combine all ingredients until well mixed. This includes the flour, protein powder, baking soda, and the rest of the ingredients from the list above.

Third Step: Pour the batter into the prepared pan and smooth the top for an even bake.

Fourth Step: Bake for 40 minutes, then turn off the oven and let the bread sit inside for an additional 5 minutes.

Fifth Step: If the center is still soft, cover the top with foil and continue baking until a toothpick inserted in the center comes out mostly clean.

Sixth Step: Allow the bread to cool, then invert it onto a plate for serving. With a prep time of just 10 minutes and cook time of 40 minutes, you’ll have a fresh loaf ready in no time.
